Ingredients
- 1 ½ cups cooked chickpeas
- ¼ cup fresh lemon juice from 1 large lemon
- ¼ cup well-stirred tahini
- 2 small garlic cloves minced
- 2 tablespoons extra-virgin olive oil plus more for serving
- ½ teaspoon ground cumin
- Salt to taste
- 2 to 3 tablespoons cold water
- Dash ground paprika for garnish
Instructions
- Whip the tahini and lemon juice: In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute. Scrape the sides and bottom of the bowl, then process for another 30 seconds until creamy.
- Add olive oil and spices: Add the olive oil, minced garlic, cumin, and 1/2 teaspoon salt to the whipped tahini mixture. Process for 30 seconds, scrape the bowl again, and process until fully blended.
- Add the chickpeas: Drain the chickpeas and add half to the food processor. Process for 1 minute, scrape the bowl, then add the remaining chickpeas and blend until thick and smooth, about 1 to 2 minutes.
- Thin with water: Slowly add 2 to 3 tablespoons of cold water while the processor is running until the hummus reaches your desired consistency.
- Finish and serve: Taste and adjust seasoning with more salt or lemon juice if needed. Serve with a drizzle of olive oil and a sprinkle of paprika.
